Cheesemaker prepares to show off his wares in Stafford

A DAIRY farmer near Stone is looking forward to showcasing the fruits of his labours in Stafford this weekend.

Ernie Durose farms Guernsey cattle at Grange Farm, Upper Leigh, near Milwich. But he has also been using the milk to make rich and creamy cheese for the past five years, under the Guernsleigh Cheese name.

Saturday's Stafford Cheese and Ale festival is his chance to showcase a passion for the craft of cheese making and his particular favourite brie.

He said: "This is a labour of love for me. I find it extremely interesting to make it.

"Every batch is different. I always try to make hard cheese and soft cheese. But our Brie outsells our hard cheese by three to one."
